
Recombinant Amylase
Amylase is an enzyme that catalyzes the hydrolysis of starch, a polysaccharide composed of glucose units linked primarily by α-1,4-glycosidic bonds, with occasional α-1,6 branches. Amylase specifically targets these glycosidic linkages, breaking down starch into smaller saccharides such as maltose, maltotriose, and glucose.
